- 2 lbs lean ground beef shopping list
- 1 onion (chopped) shopping list
- 2 red bell peppers (seeded & diced) shopping list
- 2 jalapeno peppers (seeded & diced) shopping list
- 4 cloves garlic (minced) shopping list
- 1/2 c chili powder shopping list
- 1/4 c ground cumin shopping list
- 1 tsp salt shopping list
- 1 tsp ground black pepper shopping list
- 1 can tomato paste (6 oz) shopping list
- 4 can kidney beans (15 oz, with liquid) shopping list
- 1 can chipotle peppers in adobe sauce (7 oz) shopping list
- 1 quart water (divided) shopping list
- 1/4 c all-purpose flour shopping list
- 1 tbs rice vinegar shopping list
How to make it
- In a large pot over medium heat, cook beef until brown. Drain and return to pot.
- Stir in onions, bell peppers, and jalapeno peppers and cook until tender.
- Stir in garlic and cook a minute more.
- Season with chili powder, cumin, salt, and black pepper.
- Stir in tomato paste and kidney beans with their liquid.
- In a food processor or blender, Puree the tomatoes with the chipotle peppers until smooth. Stir in the pot with 3 cups of water.
- Combine the remaining 1 cup of water with the flour in a jar and shake to combine. Pour into the chili in the vinegar.
- Simmer about 45 minutes before serving.
