Here are some perorations that might help out.
2 tablespoons oil from frying the chicken
4 tablespoons flour
4 c Chicken stock
bay leaf
1/2 c milk or half and half
1/2 teaspoon Salt
1/4 ts Black pepper
Stir in the flour and cook, stirring, 3 minutes more or until golden. (do not burn) Add the stock and bay leaf, bring to a boil, then lower the heat and simmer, stirring frequently, for 8 minutes. Add the milk, salt, and pepper and simmer for about 2 minutes or until heated through. Remove the bay leaf.

Always seemed to have potatoes and gravy on the table when growing up..Grandma always said to stand over the gravy and stir all the while until it thickens.
Thank-you for sharing this.
Kind Regards
