Ingredients

How to make it

  • Heat oven to 350 degrees;
  • In a bowl, stir together pecans, dates, orange zest and juice, 1/2 teaspoon of cinnamon, and salt;
  • Core the apples, leaving 1/2 inch at the bottom, and peel just the top edges of each;
  • Stuff the apples with the pecan/date mixture;
  • Brush the tops with melted butter;
  • Arrange apples in baking dish, and add apple juice to the bottom of the dish;
  • Cover tightly with foil;
  • Bake until apples are tender but not mushy - 35 to 45 minutes;
  • Transfer baked apples to serving platter;
  • Pour juices from the baking dish into a small saucepan;
  • Simmer over medium heat for 5 minutes until reduced by half;
  • Add brown sugar and remaining cinnamon, stirring until dissolved;
  • In seperate small bowl, mix cornstarch and water; add to mixture in saucepan and heat until thickened;
  • Serve apples immediately with sauce.
  • Note: I plan to try this using a bit of bourbon for part of the liquid......mmmmm......
