Ingredients
  • 2 Large mushrooms preferably portabellos but crimini work well too.
  • Stilton cheese or Blue cheese well crumbled
  • 1 T butter
  • 4 T marinara sauce (use your favorite or make your own)

Directions
  1. Wash mushrooms well and remove stems.
  2. Saute mushrooms over low heat in butter and cover for 5 minutes till tender
  3. Heat marinara sauce in microwave for 20 to 30 seconds till hot.
  4. Serve mushrooms on heated plates with 1 heaping t Stilton or Blue cheese
  5. Spoon 1-2 Tablespoons marinara sauce on each mushroom and serve!

I recently came back from 3 weeks traveling all over the UK and while I was in Scotland, I had this dish at one of the pubs and it was so good served with a small garden salad and a glass of their local beer. Really fantastic! :)
