How to make it

  • Nuke the potatoes until just beginning to soften but still firm
  • In an oven safe pot saute on stovetop peppers and onions for a couple minutes just to heat through
  • Add chicken broth and carrots let simmer a couple minutes
  • Add half the potatoes and coconut milk and bring back up to simmer
  • Add chicken and juice from 1/2 the lime
  • Mix
  • Add 1/2 the cilantro and green onions on top
  • Cover and bake at 350 for 15 minutes
