Ingredients
  • 4 medium gold potatoes, chopped
  • sesame oil
  • hot chili oil
  • 1 hatch chili pepper, julienned
  • 3 thin rounds of white onions
  • 1 cube chicken bullion mixed in 1/2 cup hot water
  • carrots, chopped
  • 2/3 cup coconut milk
  • 2 cups chicken, chopped into thin strips
  • juice from 1 lime
  • cilantro
  • 3 green onions

Directions
  1. Nuke the potatoes until just beginning to soften but still firm
  2. In an oven safe pot saute on stovetop peppers and onions for a couple minutes just to heat through
  3. Add chicken broth and carrots let simmer a couple minutes
  4. Add half the potatoes and coconut milk and bring back up to simmer
  5. Add chicken and juice from 1/2 the lime
  6. Mix
  7. Add 1/2 the cilantro and green onions on top
  8. Cover and bake at 350 for 15 minutes
