Baked Pork Chops With Potatoes And Peppers Recipe
I haven't tried this yet but it sounded easy and tasty. I like the fact that it is one pan to clean at the end of the meal.

Ingredients
  • 6 boneless pork chops
  • 5 medium potatoes, quartered
  • 2 green peppers, sliced
  • 1 small onion, thinly sliced
  • 1/2 lb mushrooms, sliced
  • salt and pepper to taste
  • grated Romano cheese
  • 1/2 tsp oregano
  • 1/4 cup olive oil
  • 1 cup tomato sauce

Directions
  1. In baking pan, layer chops, potatoes mushrooms and peppers, ending with onions.
  2. Season with salt and pepper.
  3. Top with tomato sauce, cheese and oregano.
  4. Pour oil over top.
  5. Bake, covered, at 350 degrees until tender, about 1 hour .

I just took this out of the oven. It is so Very good. I used yellow and red bell peppers. Added fresh garlic, oregano, and fresh rosemary in addition to the dried variety. I used fingerling potatoes cut in half, lengthwise. I was going to wait to serve this tomorrow for dinner, but it is too good and I can't wait. Thanks for the post.
