Turkey Tetrazinni

- 10 oz. mushrooms, sliced thin shopping list
- 1/4cup butter shopping list
- 1/4cup flour shopping list
- 1-3/4 cups milk shopping list
- 2 cups chicken broth shopping list
- 1/4cup sherry shopping list
- 10 oz. spaghetti shopping list
- 1 lb. honey Baked turkey breast, diced or 3 cups roasted turkey shopping list
- 8 oz. frozen peas shopping list
- 1/2 cup parmesan cheese, grated shopping list
- 1/3 cup parmesan cheese, grated shopping list
- 1/3 cup fresh bread crumbs shopping list
- 1 Tbsp. butter shopping list
How to make it
- Preheat oven to 375º. In a large heavy saucepan sauté over medium heat add sliced mushrooms with 1/4 cup butter. Cook until most of their liquid is reduced, lower the heat, add flour and cook for an additional 3 minutes. Add milk, broth and sherry, stirring until it thickens.
- Meanwhile, in a kettle of boiling salted water add spaghetti cook until it is al dente and drain.
- In a large bowl combine spaghetti, mushroom sauce, turkey, peas and ½ cup Parmesan cheese. Mix well and transfer to a greased shallow 3 quart casserole. Mix 1/3 cup Parmesan cheese and fresh bread crumbs. Put on top of casserole. Dot top with 1 tablespoon butter.
- Bake for 30 to 40 minutes, or until it's bubbling and the top is golden brown.
- Can be prepared in advance and frozen prior to baking. Reduce heat to 325º and cook for approx. 1 1/2 hours. Or bring to room temperature and cook for 50 minutes.
