Mexicali Cheese Pasta Recipe
I cut this recipe off a box of pasta. It sounded good. They did not include anything more spicy that the salsa. I think I would spice it up more when I make it.

Ingredients
  • 1 1/2 cups milk
  • 2 Tbsp cornstarch
  • 1 tsp salt
  • 1/2 tsp dry mustard
  • 1/4 tsp pepper
  • 2 Tbsp margarine
  • 8 oz shredded cheddar cheese, divided
  • 8 oz pasta, such as rotini or penne
  • 1 cup salsa

Directions
  1. In a 3 quart sauce pan, combine milk, cornstarch, salt, mustard and pepper.
  2. Add margarine, and stirring constantly, bring to a boil over medium heat. Boil for 1 minute. Remove from heat.
  3. Reserve 1/4 cup cheese for topping. Stir remaining cheese into sauce until smooth.
  4. Stir in past and salsa.
  5. Turn into a 2-quart casserole and sprinkle with reserved cheese.
  6. Bake in 375 degree oven for 25 minutes or until hot and bubbly.
