Sweet Potato Chocolate Nut Cake

SWEET POTATO CHOCOLATE NUT CAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Kilgore Estate in Little Elm, Texas in 1988.
Ingredients
- 4 ounces semisweet chocolate melted shopping list
- 1 teaspoon vanilla extract shopping list
- 3 cups all purpose flour shopping list
- 1-1/2 cups granulated sugar shopping list
- 2 teaspoons baking powder shopping list
- 2 teaspoons baking soda shopping list
- 2 teaspoons cinnamon shopping list
- 1/2 teaspoon ground ginger shopping list
- 1/4 teaspoon ground cloves shopping list
- 1/2 teaspoon ground nutmeg shopping list
- 2 cups mashed cooked sweet potatoes shopping list
- 1-1/2 cups oil shopping list
- 4 eggs shopping list
- 1 cup chopped nuts shopping list
How to make it
- Butter and lightly flour a tube pan then mix melted chocolate together with the vanilla.
- Sift together the dry ingredients and set aside.
- In a large bowl beat the sweet potatoes and oil together then add eggs one at a time until blended.
- Slowly add the dry ingredients and mix well then stir in the nuts.
- Place 1/3 of the mixture in another bowl and stir in the chocolate mixture.
- Alternate batters in pan then swirl through layers with a knife to get a marble effect.
- Bake at 350 for 75 minutes then let cool for 10 minutes in pan.
- Remove from pan and cool completely on a rack.
