Ricotta Cookies Recipe

Ingredients

2 sticks butter, softened

1 3/4 cups sugar

2 eggs

1 lb ricotta

4 cups flour

2 tsp vanilla

1 tsp baking powder

1 tsp baking soda

1 tsp lemon flavoring

Directions

Mix all ingredients with an electric mixer, except flour, making sure that the ricotta is well blended and scraping sides of bowl frequently.

Add flour two cups at a time until well blended. The batter will be very thick.

Form balls, about 1-inch in diameter and put it on ungreased cookie sheet.

Bake in a 350 degree oven for 10 to 15 minutes.
