patatokeftedes potato patties

- 1 kilo potatoes peeld and each cut in half shopping list
- 1lb plus 3 oz of feta or gruyere cheese shopping list
- 2 eggs shopping list
- 1 cup of finely chopped flatleaf parsley shopping list
- 1/4 teaspoon cayenne pepper shopping list
- sea salt to taste shopping list
- flour for dusting shopping list
- olive oil for frying shopping list
How to make it
- boil potatoes till they are but not soggy. remove and put in a bowl
- and mash thoroughly. put in the the rest of the ingredients. mix well using your hands. shape into nice size patties. dust with flour.
- in a deep frying pan heat olive oil to high. fry on both sides till they
- are brown . place on paper towel to soak extra oil. squirt some lemon jujice...can be eaten along with greek olives,pickled veggies
- grilled fish or chicken

Mashed Potato patties are a dish from the South that I have eaten since I was a small child. I love them but never thought to make them with Cheese in them. I'm not a feta fan but Gruyere is on of my favorites! This is definitely on my list to mak...more
