Italian Rum Cake Recipe
This recipe comes from a very old issue of Family Circle magazine. Very easy to make and very delicious!

Ingredients
  • 1 - 8 or 9-inch ready made sponge cake
  • 2 cups ricotta cheese
  • 3 oz cream cheese
  • 1 Tbsp granulated sugar
  • 8 squares semisweet chocolate
  • 1/2 cup mixed candied fruit, chopped
  • 1/2 cup pineapple juice
  • 1/2 cup rum
  • 1 stick butter (1/2 cup)
  • 2 tsp instant espresso coffee
  • 1/2 cup hot water
  • 3 cups confectioners' sugar

Directions
  1. Split cake into 4 thin layers.
  2. Beat ricotta, cream cheese, and granulated sugar until smooth.
  3. Finely chop 2 squares of chocolate; stir into cheese along with the candied fruit.
  4. Combine pineapple juice and rum in a cup.
  5. Drizzle each of 3 layers of cake with 1/4 cup of the rum syrup.
  6. Spread each with 1/3 of the cheese filling.
  7. Assemble cake with plain layer on top. Brush top and sides with remaining rum syrup.
  8. Melt remaining 6 squares of chocolate with butter in a medium sized bowl over hot, not boiling, water. Remove from heat
  9. Dissolve coffee in hot water and then add to chocolate.
  10. Stir in confectioners' sugar until smooth.
  11. Chill until thick enough to spread.
  12. Frost top and side of cake.
  13. Decorate with candied fruit and nuts, if desired.

Great post. I'm Italian and when I was young my grandmother made her version of this rum cake, but in her's the cake was soaked with rum. Not for children but when I was in my teens was aloud a piece.
