Confetti Cornbread Recipe

Enjoy this festive bread for brunch or as a side with dinner.. Surprise-the color comes from diced peppers.

Ingredients
- 1 c flour
- 1 c cornmeal
- 3 Tbs sugar
- 1-1/4 tsp chili powder
- 1 tsp salt
- 1 c milk
- 1 stick unsalted butter,melted
- 1 large egg
- 1 c finely diced mixed peppers
Directions
- Preheat oven to 400 degrees and butter an 8 or 9" square pan.
- Whisk all dry ingredients together in a large bowl. In another bowl,whisk the milk,butter,and egg together. Pour the wet ingredients over the dry and gently stir until the batter is evenly moistened. Add peppers,stir to combine.
- Bake about 25 mins.,or till toothpick inserted in bread comes out dry. Cool at least 15 mins. before serving.
