Big Bob Gibsons Brined Chicken With White Bbq Sauce Recipe

Ingredients

1 cup apple juice

1 cup water

1 tablespoon salt

1/4 tablespoon granulated garlic

1 tablespoon honey

1/2 tablespoon dark brown sugar

1/2 tablespoon soy sauce

1/2 tablespoon fresh lemon juice

8 boneless chicken, breasts - I use bone-in skinless chicken breasts

2 cups mayonnaise

1 cup white vinegar

1/2 cup apple juice

2 teaspoons prepared horseradish

2 teaspoons ground black pepper

2 teaspoons fresh lemon juice

1 teaspoon salt

1/2 teaspoon cayenne pepper

Directions

Chicken: Combine brine ingredients in a large zip top bag & mix well. Add the chicken, squeeze out the air, and refrigerate for an hour - I did mine for 3 hours. Remove chicken from brine and grill as desired.

White sauce: Mix all ingredients well. Store refrigerated in an airtight container for up to 2 weeks.

To serve: The recipe says to dip the chicken into the sauce, but I simply drizzled it over the tops of the chicken. Delicious!

I am a fan of Alabama white sauce and love the mayo based sauce. I posted similar Bob Gibson sauce and for cooking a whole chicken a while ago too! Great post and reminder I should make more!!!
