Ingredients
  • 1/4 lb. bacon,sliced and diced
  • 1/4 il. breakfast sausage,crumbled
  • 2 1/2 cups onions ,diced
  • 3 tblsp. minced garlic
  • 1 cup celery peeled and diced
  • 2 tbls. paprika
  • 1 12 oz. bottle of beer
  • 5 cups of a good chicken stock
  • 1 small ham bone
  • 3 cups fresh black-eyed peas
  • 2 tbsp. cornstarch
  • 3 tbsp.water
  • 2 lemons,juiced salt to taste
  • 2 cups cooked rice

Directions
  1. In a medium heavy bottom saucepot,render the bacon over medium heat.
  2. Add the brea kfast sausage,cook till almost done.
  3. Add onions and the garlic and cook till slightly carmalized.
  4. Add celery and paprika and wilt;
  5. add beer,reduce by 1/2.
  6. add chicken stock,ham bone,and the fresh black-eyed peas.
  7. Simmer over LOW heat 1 1/2-2 hours until peas are fully cooked.
  8. ,and liquid has reduced to just cover the peas.
  9. you may need to add more chicken stock or water.
  10. Season with lemon juice and salt.
  11. Remove ham bone or hock before using.
  12. combine with the rice.
  13. May be prepared up to 2 days in advance.
