  • Ingredients:
  • 4 ½ -oz Wheat Germ
  • 3-oz quick oats
  • ¼ cup plus 2 Tbs. all-purpose flour
  • 1 tsp. Grated lemon zest
  • 1 tsp. Grated orange zest
  • ½ tsp. Cinnamon
  • ½ tsp. Ground allspice
  • ¼ tsp. Ground cardamon
  • ¼ tsp. Ground cloves
  • ½ tsp. Baking soda
  • ¼ tsp. Salt
  • ½ cup egg substitute
  • ¼ cup firmly packed dark brown sugar
  • 1 Tbs. Brandy or Dark Rum
  • ½ tsp. Vanilla extract
  • ¼ cup currants
  • ¼ cup golden raisins
  • 2 small apples, pared, cored and finely grated
  • 1 Tbs. chopped candied orange peel

Directions
  1. 1)Preheat oven to 350. Spray 2 baking sheets with non-stick cooking spray.
  2. 2)In a large bowl, combine wheat germ, oats, flour, lemon and orange zest, cinnamon, allspice, cardamom, cloves, baking soda, and salt.
  3. 3)In a medium bowl, combine egg substitute, sugar, brandy and vanilla; stir in currants, raisins, apples and candied orange peel. Add wet ingredients to dry; stir just until combine.
  4. 4)Drop batter by rounded tablespoonfuls to make 24 cookies. Bake 12 minutes or until golden on bottom. Cool 5 minutes on sheets, then transfer to rack to cool completely.
  5. Serving size is 2 cookies
  6. Calories per serving: 180, Fat: 2g, Carbohydrate: 26g, Sodium:117mg
