Ingredients
  • 4 tablespoons butter
  • 3 medium onions, thinly sliced
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 1/2 tablespoons flour
  • 1 teaspoon baking powder
  • 1 tablespoon parsley, chopped
  • 3 eggs, beaten
  • 1 cup cream

Directions
  1. Preheat the oven to 350.
  2. Melt the butter in a skillet. Add the onions and cook over low heat until lightly brown (about 25-30 minutes). Allow this to cool slightly. Add the sugar, salt, flour and baking powder to a mixing bowl. In a separate bowl, blend together the eggs and cream. Whisk the egg mixture into the dry mix. Add the parsley and onions.
  3. Lightly grease a medium (1-quart) casserole. Add the mixture and bake for 25-35 minutes (or until lightly brown and firm in the middle).
  4. This is a hearty side dish that is delicious with any entree. Serve warm.
