Ingredients
  • 2 SKINLESS, BONELESS CHICKEN BREASTS, CUT IN HALF
  • 6 TABLESPOONS HONEY
  • 2 TEASPOONS SEA SALT
  • 4 TABLESPOONS CARAWAY SEEDS
  • 4 TABLESPOONS BUTTER

Directions
  1. I COOK THIS IN A TOASTER OVEN.
  2. PREHEAT IT TO 375
  3. WASH THE CHICKEN & CUT THE FULL BREASTS IN HALF & DRY
  4. ON A DINNER SIZED PLATE, SPREAD THE CHICKEN OUT
  5. PREPARE EACH SIDE COMPLETELY BEFORE DOING THE OTHER SIDE OF THE BREAST.
  6. POUR NEARLY A TABLESPOON OF HONEY ON EACH SIDE OF EACH BREAST.
  7. OVER EACH BREAST SPRINKLE ONE HALF TABLESPOON CARAWAY SEEDS PER SIDE.
  8. SPRINKLE THE SEA SALT TO YOUR TASTE.
  9. ***REMEMBER, SEA SALT HAS NEARLY HALF THE SODIUM OF REGULAR SALT. UNTIL YOU'RE AWARE OF THE DIFFERENCES, REMEMBER, YOU CAN ALWAYS ADD MORE, BUT YOU CAN NOT EVER UNDO YOUR SALTING.
  10. PUT YOUR IRISH SODA BREASTS ON THE TOASTER OVEN TRAY.
  11. JUST BEFORE YOU PUT THEM INTO THE TOASTER OVEN, CUT 1 TABLESPOON WORTH OF BUTTER
  12. CUT THIS IN HALF AGAIN AND PUT 3 OR 4 DOLLOPS OF YOUR 1/2 TABLESPOON OF BUTTER ALL OVER 1 BREAST, SAVING THE OTHER HALF FOR WHEN YOU TURN IT OVER.
  13. DO THE SAME FOR THE 3 OTHER BREASTS.
  14. PUT THEM INTO THE TOASTER OVEN AND BAKE FOR 12 TO 15 MINUTES.
  15. PULL THEM OUT & TURN THEM OVER.
  16. (IF YOU ARE SO INCLINED YOU CAN ADD A LITTLE MORE HONEY & A COUPLE MORE SEEDS TO THE UNCOOKED SIDE,
  17. IT'S NOT NECESSARY, BUT IF YOU WANT TO PUMP UP THE FLAVOR, DO SO WITH A SOFT TOUCH.)
  18. ADD THE REMAINING BUTTER IN THE SAME FASHION YOU DID TO THE FIRST SIDE & PUT THEM BACK IN TO FINISH COOKING.
  19. ****TOASTER OVENS VARY, SO CHECK THEM AFTER THEY'VE COOKED FOR 5 TO 7 MINUTES.
  20. OVER COOKED CHICKEN STINKS, EVEN IF IT'S DIVINE AND UNDER COOKED CHICKEN'S JUST DANGEROUS.
  21. ****I RECOMMEND THAT THE FIRST TIME YOU MAKE THIS, SACRIFICE 1 BREAST BY CUTTING IT IN HALF TO TEST FOR DONENESS.
  22. CENTER WHITE CHICKEN IS COOKED & TRANSLUCENT CHICKEN ISN'T. CUT AT THICKEST PART.
  23. REMEMBER THAT SMALLER PIECES WILL COOK MORE QUICKLY AND LARGER PIECES WILL TAKE LONGER.
  24. WHEN COOKED, PLATE, SERVE & ENJOY.
  25. I HAPPEN TO LIKE THEM COLD AS WELL SO I MAKE THEM AHEAD OF TIME FOR PICNICS.

Now this is different and I like it a lot. It's a HIGH 5 for sure.


This will be a sucess at our house, easy to put together for supper. Good information on the cooking, I have an instant read thermometer, but still cut into the chicken to make sure its done. ThNKS FOR SHARING. Stay warm!
