Irish Soda Breasts

- 2 SKINLESS, BONELESS chicken breasts, CUT IN HALF shopping list
- 6 TABLESPOONS honey shopping list
- 2 TEASPOONS sea salt shopping list
- 4 TABLESPOONS caraway seeds shopping list
- 4 TABLESPOONS butter shopping list
How to make it
- I COOK THIS IN A TOASTER OVEN.
- PREHEAT IT TO 375
- WASH THE CHICKEN & CUT THE FULL BREASTS IN HALF & DRY
- ON A DINNER SIZED PLATE, SPREAD THE CHICKEN OUT
- PREPARE EACH SIDE COMPLETELY BEFORE DOING THE OTHER SIDE OF THE BREAST.
- POUR NEARLY A TABLESPOON OF HONEY ON EACH SIDE OF EACH BREAST.
- OVER EACH BREAST SPRINKLE ONE HALF TABLESPOON CARAWAY SEEDS PER SIDE.
- SPRINKLE THE SEA SALT TO YOUR TASTE.
- ***REMEMBER, SEA SALT HAS NEARLY HALF THE SODIUM OF REGULAR SALT. UNTIL YOU'RE AWARE OF THE DIFFERENCES, REMEMBER, YOU CAN ALWAYS ADD MORE, BUT YOU CAN NOT EVER UNDO YOUR SALTING.
- PUT YOUR IRISH SODA BREASTS ON THE TOASTER OVEN TRAY.
- JUST BEFORE YOU PUT THEM INTO THE TOASTER OVEN, CUT 1 TABLESPOON WORTH OF BUTTER
- CUT THIS IN HALF AGAIN AND PUT 3 OR 4 DOLLOPS OF YOUR 1/2 TABLESPOON OF BUTTER ALL OVER 1 BREAST, SAVING THE OTHER HALF FOR WHEN YOU TURN IT OVER.
- DO THE SAME FOR THE 3 OTHER BREASTS.
- PUT THEM INTO THE TOASTER OVEN AND BAKE FOR 12 TO 15 MINUTES.
- PULL THEM OUT & TURN THEM OVER.
- (IF YOU ARE SO INCLINED YOU CAN ADD A LITTLE MORE HONEY & A COUPLE MORE SEEDS TO THE UNCOOKED SIDE,
- IT'S NOT NECESSARY, BUT IF YOU WANT TO PUMP UP THE FLAVOR, DO SO WITH A SOFT TOUCH.)
- ADD THE REMAINING BUTTER IN THE SAME FASHION YOU DID TO THE FIRST SIDE & PUT THEM BACK IN TO FINISH COOKING.
- ****TOASTER OVENS VARY, SO CHECK THEM AFTER THEY'VE COOKED FOR 5 TO 7 MINUTES.
- OVER COOKED CHICKEN STINKS, EVEN IF IT'S DIVINE AND UNDER COOKED CHICKEN'S JUST DANGEROUS.
- ****I RECOMMEND THAT THE FIRST TIME YOU MAKE THIS, SACRIFICE 1 BREAST BY CUTTING IT IN HALF TO TEST FOR DONENESS.
- CENTER WHITE CHICKEN IS COOKED & TRANSLUCENT CHICKEN ISN'T. CUT AT THICKEST PART.
- REMEMBER THAT SMALLER PIECES WILL COOK MORE QUICKLY AND LARGER PIECES WILL TAKE LONGER.
- WHEN COOKED, PLATE, SERVE & ENJOY.
- I HAPPEN TO LIKE THEM COLD AS WELL SO I MAKE THEM AHEAD OF TIME FOR PICNICS.

This will be a sucess at our house, easy to put together for supper. Good information on the cooking, I have an instant read thermometer, but still cut into the chicken to make sure its done. ThNKS FOR SHARING. Stay warm!
