  • Ingredients:
  • 1 ¼ cups + 1 Tbs. all-purpose flour
  • ½ tsp. Baking soda
  • ¼ Tsp. Salt
  • ½ cup Sugar
  • 1/3 cup stick Margarine
  • 2 Eggs
  • 4-oz Almonds, finely chopped
  • 1 tsp. Almond extract

Directions
  1. 1)Preheat oven to 350. Spray 2 large baking sheets with non-stick cooking spray.
  2. 2)In a medium bowl, combine flour, baking soda and salt; set aside.
  3. 3)In a large bowl with an electric mixer, beat sugar and margarine until light and fluffy. Add
  4. 1 egg; continue beating until smooth. Gradually add flour mixture; stir until smooth. Stir in almonds and almond extract.
  5. 4)Drop batter by 2 teaspoonfuls onto prepared baking sheets to make 48 cookies; flatten slightly with fork. In a small cup, lightly beat remaining egg. Brush tops of cookies evenly with the egg. Bake 10 – 12 minutes, until brown and puffed. Cool 1 minute; remove to wire rack and cool completely.
