How to make it

  • 1)Preheat oven to 350. Spray 2 large baking sheets with non-stick cooking spray.
  • 2)In a medium bowl, combine flour, baking soda and salt; set aside.
  • 3)In a large bowl with an electric mixer, beat sugar and margarine until light and fluffy. Add
  • 1 egg; continue beating until smooth. Gradually add flour mixture; stir until smooth. Stir in almonds and almond extract.
  • 4)Drop batter by 2 teaspoonfuls onto prepared baking sheets to make 48 cookies; flatten slightly with fork. In a small cup, lightly beat remaining egg. Brush tops of cookies evenly with the egg. Bake 10 – 12 minutes, until brown and puffed. Cool 1 minute; remove to wire rack and cool completely.
