Anise Cookies - Anesplatzchen Recipe
I have this recipe a long time and don't even know the source. I bake the second suggested way as I prefer a softer cookie. Please make sure you beat the mixture the full time specified!

Ingredients
  • 3 Eggs, room temperature
  • 1 c Plus 2 Tbs. sugar
  • 1 3/4 c Flour
  • 1/2 ts Baking powder
  • 1/2 ts Salt
  • 1 1/2 ts Anise extract

Directions
  1. Beat eggs until fluffy in mixer bowl at medium speed.
  2. Gradually beat in sugar.
  3. Continue beating 20 minutes more ( a must ).
  4. At low speed blend in flour, baking powder and salt.
  5. Add anise extract and beat only to blend.
  6. Drop by teaspoonsful on greased and floured baking sheets about 1/2 inch apart.
  7. Swirl each to make a circular form.
  8. You can bake these two ways.
  9. Either let stand on baking sheets for 8 hours at room temperature
  10. ( to dry out ) or bake immediately.
  11. Either way bake at 325 degrees about 10 minutes or until firm looking or set.
  12. cool on rack and store airtight.
  13. If made the first way to dry out these are a coffee dunker cookie or if baked immediately they are much softer and delicate.
  14. Either way they are delicious.
  15. I bake mine the second way.

Love these, my sister use to make them every year around the holidays. Her's were firm but yet a bit chewy, would you get this result by letting them sit or baking right away? You have my 5

The oven repairman is coming Friday and I think these are the first thing I'll bake once it's squared away. I seem to remember a German neighbor making these soft and then dipping in semisweet chocolate and I would utterly swoon at the scent. The taste with a cup of coffee was total bliss. I am so excited to have this recipe!
