English Onion Soup With Sage And Chedder

- Knob of butter shopping list
- fresh sage shopping list
- 6 cloves of garlic, peeled & crushed shopping list
- 5 red onions,peeled & sliced shopping list
- 3 Large white onions, peeled & sliced shopping list
- 3 shallots, peeled & Sliced shopping list
- 300g leeks, trimmed & sliced shopping list
- sea salt & ground black pepper shopping list
- 2 Litres stock shopping list
- 8 Slices of bread shopping list
- 200g Freshly grated chedder cheese shopping list
- Worcester sauce shopping list
- olive oil shopping list
How to make it
- Put butter, 2 glugs olive oil,sage & garlic in a pan
- Stir, add onions, shallots & leeks
- Season with salt & pepper
- Place lid ajar, cook slowly for 50 mins, without colouring veg
- Remove lid for the last 20 mins
- When onions & leeks are silky, add stock, bring to the boil & simmer for 10-15 mins
- Preheat oven or grill, toast bread on both sides
- Check the correct seasoning of soup & serve
- Tear toasted bread over each bowl to fit like a lid
- Sprinkle with grated cheese & Worcester sauce
- Dress your reserved safe leaves with some olive oil & place on bread
- Place bowls in oven to melt cheese & serve
