Ingredients

How to make it

  • Put butter, 2 glugs olive oil,sage & garlic in a pan
  • Stir, add onions, shallots & leeks
  • Season with salt & pepper
  • Place lid ajar, cook slowly for 50 mins, without colouring veg
  • Remove lid for the last 20 mins
  • When onions & leeks are silky, add stock, bring to the boil & simmer for 10-15 mins
  • Preheat oven or grill, toast bread on both sides
  • Check the correct seasoning of soup & serve
  • Tear toasted bread over each bowl to fit like a lid
  • Sprinkle with grated cheese & Worcester sauce
  • Dress your reserved safe leaves with some olive oil & place on bread
  • Place bowls in oven to melt cheese & serve

    I was late one time because of an argument with the car. It kept trying to convince me that my door had turned into a jar, stupid car.:) Soup sounds great.
