Chocolate Cheesecake

- Crust: shopping list
- 2 cups chocolate wafer crumbs shopping list
- 5 Tbsp melted butter shopping list
- Filling: shopping list
- 3 pkg (8 oz each) cream cheese, at room temperature shopping list
- 1 cup granulated sugar shopping list
- 5 large eggs shopping list
- 2 oz (2 squares) semisweet chocolate, melted shopping list
- 1/2 cup sour cream shopping list
- Frosting: shopping list
- 6 oz (6 squares ) semi-sweet chocolate, melted shopping list
- 1/2 cup sour cream shopping list
How to make it
- Tor prepare crust, in a medium bowl, mix together chocolate crumbs and melted butter until well blended. Press into a 9-inch springform pan.
- Preheat oven to 300 degrees.
- To prepare filling, in a large bowl, beat together cream cheese, sugar, and eggs at medium speed until smooth and fluffy. Spoon half of the cream cheese mixture into crust.
- Stir chocolate into remaining cream cheese mixture until well blended. Drizzle over batter in crust to make swirls.
- Bake cheese cake for 50 minutes.
- Transfer to a wire rack and cool completely.
- Transfer cheesecake to a serving plate, cover with plastic wrap and chill for two hours.
- Uncover cheesecake and carefully remove the side of the pan.
- To prepare frosting, in a small bowl, mix together chocolate and sour cream. Spread over cheesecake. Chill briefly until frosting is set.
- **Note: Cheesecake can be frozen for up to three weeks. Defrost before serving.
