One Bowl French Apple Cake

- 1 1/2 sticks butter or good quality butter blend margarine, very soft ( your finger will make an easy identation when touched ) shopping list
- 4 large eggs, room temperature shopping list
- 1 1/2 cups flour shopping list
- 1 1/3 cups white granulated sugar shopping list
- 1/ 4 tsp baking powder shopping list
- dash salt shopping list
- zest of one small lemon shopping list
- 2 tsp clear vanilla shopping list
- 2 Tbs French dessert white wine ( I use Lilleth ) or apple brandy shopping list
- 4 small to medium apples, peeled and sliced shopping list
- glaze optional: shopping list
- melted apple jelly shopping list
- powder sugar if desired shopping list
- of course vanilla ice cream too if desired shopping list
- Or even a bit of raspberry compote on the side! shopping list
How to make it
- Grease and flour a good quality 10 inch round cake pan
- Preheat oven to 375F
- In a large bowl, place all ingredients in order listed EXCEPT APPLES and mix to blend smooth with an electric mixer at medium speed.
- It should be thick
- With a spatula blend 3 sliced apples into the batter
- Scrape batter into pan and spread out evenly
- Arrange remaining apple slices in a pin wheel fashion over the dough
- Bake 375F middle oven rack ( I often use one of those insulated baking sheets to place pan on when recipes have a lot of sugar and butter in them )
- Bake 60 minutes OR until top is golden and center tests done with a cake tester
- Cover with foil if browning too fast
- Place pan on cooling rack for 15 minutes
- Loosen sides, invert cake and reinvert again top apple side up on serving platter or cake plate and let cool
- May heat up some apple jelly and spoon over the top or dust heavily with powdered sugar
- Freezes well
- Store uneaten portions covered with foil
- Serve warm, room temp for best flavor.
- Best the same day made and even the next day but I find butter cakes tend to stale easily
