How to make it

  • Mix 3 tablespoons lime juice, garlic, salt, thyme, pepper flakes and black pepper in dish. Add chicken and mix well. Heat oil until hot in large skillet. Place chicken in skillet in single layer and cook over medium heat until browned about 5 minutes. Turn chicken over and brown other side about 5 minutes. Add onion to pan and cook stirring often about 8 minutes or until chicken and onions are cooked through. Add tomatoes and curry powder to pan. Cook 2 minutes. Stir in remaining lime juice. Serve with rice. Garnish with citrus wedges.

    Nevermind, I had a blind moment...I see the onions in the ingredients. LOL!

    Hi Chefmeow,

    The recipe says to add onion, but there is no onion in the ingredients. How much onion do you add?
    Sounds really good, I'm trying this tonight.

    This sounds wonderful! I was just 1.) looking for good chicken recipes, then 2.) looking to see if anyone posted an old favorite of mine before I posted it. There are more caribbean chicken recipes than one can count! (However, I think I'd enjoy them all!)

    The lime juice and wedges sound so good in this one!

    We mostly eat drumsticks or chicken breast, you think either of those would work as well?

    Made this for the family last night and really enjoyed it. Thanks for the great recipe. Instead of plain rice we made Red Beans and Rice and thought it complimented this dish well. We did the whole carribean theme and made an Orange Rum cake for dessert and Pina Coloda's to drink. Yummy!
