How to make it

  • 1)Preheat oven to 350. Spray an 11” x 7”-inch baking pan with non-stick cooking spray.
  • 2)In a medium bowl, whisk together flour, oats, brown sugar and cinnamon. With pastry blender or 2 knives, cut in margarine and 2 tablespoons of water until mixture forms a crumbly dough. Press dough into the bottom of prepared pan; bake 10 – 15 minutes, until golden.
  • 3)In a small bowl, with electric mixer on high speed, beat cream cheese and sugar until fluffy. Add egg substitute, zest and vanilla; beat until smooth. Pour cream cheese mixture over crust; sprinkle evenly with blueberries. Bake for 25 – 30 minutes, until set. Cool completely on wire rack before cutting into 12 equal bars.
