Mini Cherry Cheesecakes, which have a rich base under a lovely tart cherry filling. They make a festive dessert. This recipe was adapted from Kay Keller who posted this recipe in the Taste of Home magazine of Dec/Jan of 1995.

  • Ingredients:
  • 1 cup vanilla wafer crumbs
  • 3 Tbs. margarine, melted
  • 1 package ( 8-oz ) 1/3 less fat cream cheese, softened
  • 1 ½ tsp. Vanilla extract
  • 2 tsp. Lemon juice
  • 1/3 cup sugar
  • 1 egg
  • Topping:
  • 1 pound pitted canned or frozen tart red cherries
  • ½ cup sugar
  • 2 Tbs. cornstarch
  • Red food coloring

Directions
  1. Preheat oven to 375.
  2. In a bowl, combine crumbs and margarine. Press gently into the bottom of 12 paper-lined muffin cups. In a mixing bowl, combine cream cheese, vanilla, lemon juice, sugar and egg; beat until smooth. Spoon into crusts. Bake at 375 for 12 – 15 minutes or until set. Cool completely. Drain cherries, reserve ½ cup juice in a cepan; discard remaining juice. To juice in pan add cherries, sugar, cornstarch and food coloring if desired. Bring to a boil, stirring occasionlly; boil for 1 minute. Cool; spoon over cheesecakes. Chill for at least 2 hours.

I have made a recipe very similar to this except I used Nilla Vanilla Wafers in the bottom. Yummy recipe and 5++++ forks.


Will look great on a holiday dessert tray..five forks
