MINI CHERRY CHEESECAKES

- 1 cup vanilla wafer crumbs shopping list
- 3 Tbs. margarine, melted shopping list
- 1 package ( 8-oz ) 1/3 less fat cream cheese, softened shopping list
- 1 ½ tsp. vanilla extract shopping list
- 2 tsp. lemon juice shopping list
- 1/3 cup sugar shopping list
- 1 egg shopping list
- Topping: shopping list
- 1 pound pitted canned or frozen tart red cherries shopping list
- ½ cup sugar shopping list
- 2 Tbs. cornstarch shopping list
- red food coloring shopping list
How to make it
- Preheat oven to 375.
- In a bowl, combine crumbs and margarine. Press gently into the bottom of 12 paper-lined muffin cups. In a mixing bowl, combine cream cheese, vanilla, lemon juice, sugar and egg; beat until smooth. Spoon into crusts. Bake at 375 for 12 – 15 minutes or until set. Cool completely. Drain cherries, reserve ½ cup juice in a cepan; discard remaining juice. To juice in pan add cherries, sugar, cornstarch and food coloring if desired. Bring to a boil, stirring occasionlly; boil for 1 minute. Cool; spoon over cheesecakes. Chill for at least 2 hours.
