How to make it

  • Preheat oven to 375 degrees F.
  • Cook tiny shell pasta and drain.
  • Sauté eggplant, onion, and garlic in oil over medium heat until tender.
  • Combine with pasta, tomato sauce, parsley, lemon juice, olives, Parmesan, and seasonings.
  • Transfer to a 2-quart baking dish.
  • Top with sliced Monterey Jack and bake uncovered for 30 minutes.

    Good recipe although i don't like eggplant,i think i could substitute cabbage and try it out.

    thanks for this posting- saved for future use sounds great.
    I made your burger heaven casserole and it sure was a winner - I was told I HAD to do this one again! so guess that merits a high 5!!!! thanks so much - thats another one for the"favourites"
