PECAN DELIGHTS

Who can resist the rich chewy caramel over crunchy pecans drizzled with sweet chocolate? These candies will become a holiday favorite to make and eat. Adapted from Linda Jonsson's recipe that was posted in the Taste of Home Magazine of Nov/Dec of 2002.
Ingredients
- Ingredients: shopping list
- 2 ¼ cups packed brown sugar shopping list
- 1 cup butter or margarine shopping list
- 1 cup light corn syrup shopping list
- 1/8 tsp. salt shopping list
- 1 can ( 14-oz ) sweetened condensed milk shopping list
- 1 tsp. vanilla extract shopping list
- 1 ½ pounds whole pecans shopping list
- 1 cup ( 6-oz ) semisweet chocolate chips shopping list
- 1 cup ( 6-oz ) milk chocolate chips shopping list
- 2 Tbs. shortening shopping list
How to make it
- In a large saucepan, combine the first four ingredients. Cook over medium heat until al sugar is dissolved. Gradually add candy thermometer reads 248 ( firm-ball stage ). Remove from the heat; stir in vanilla until blended. Fold in the pecans. Drop by tablespoonfuls onto a waxed paper-lined cookie sheet. Chill until firm. Melt chocolate chips and shortening in a microwave-safe bowl or double boiler. Drizzle over each cluster. Cool.
