Mexican Rice

- 2 cups long grain rice shopping list
- 1/4 cup oil, (I used extra light olive) shopping list
- 3 3/4 cup water (or stock) shopping list
- 1 Caldo de Pollo boullion cube (if using water) shopping list
- 1 can tomato sauce shopping list
- 3 cloves garlic peeled and slightly smashed shopping list
- 1/2 onion, sliced thin shopping list
- 1/2 bell pepper, cut into strips shopping list
- 1/2 teaspoon cominos (cumin) shopping list
- salt and pepper to taste shopping list
How to make it
- Put oil into skillet over medium heat and add rice.
- Stir and brown rice till medium brown.
- Add onions and saute till soft.
- Add garlic and bell peppers and saute about 1 minute stirring
- Pour in other ingredients
- Cover and lower heat to simmer for 15 minutes
- Turn off heat and let sit 5 minutes.
- Crack the lid when this is done or you will have mushy rice.
