E-Z SZECHWAN CHICKEN

- 1 cup rice shopping list
- 2 cups water shopping list
- 1 lb boneless skinless chicken breasts shopping list
- 1 tsp veg oil shopping list
- 1 bag ready-made coleslaw shopping list
- 1 green pepper, julienne shopping list
- 1/2 cup chicken stock shopping list
- 1/2 cup store bought jarred Szechwan sauce shopping list
- 1/4 cup honey shopping list
How to make it
- Boil water and add rice.
- Turn off stove and cover rice, set aside.
- Slice chicken into strips.
- Heat oil in a heavy skillet.
- Add coleslaw and stir-fry for 2-3 minutes.
- Remove and set aside.
- Add meat to skillet and fry over med heat until browned.
- Add pepper and stock.
- Cover and cook for 5-6 minutes until chicken is tender.
- Combine Szechwan sauce and honey.
- Add coleslaw mix back into the skillet.
- Cook for 5 minutes more. Serve over rice.
