Golden Dome Of Cauliflower Recipe
This makes a beautiful presentation for a special holiday meal but tastes delicious anytime. An easy mustardy cheese sauce gilds a whole cauliflower.

Ingredients
  • 1 - 21/2 lb. cauliflower
  • 2 c shredded cheddar cheese
  • 1/4 c mayo
  • 2 T dijon mustard
  • 2 T freshly grated Parmesan

Directions
  1. Core cauliflower and remove outer leaves, leaving head intact. In large pot, steam on rack over boiling water for about 20 minutes until tender crisp. Transfer to heat proof serving dish.
  2. Combine cheese, may and mustard. Spread over cauliflower. Sprinkle with Parmesan cheese.
  3. Bake 425 oven for 10 minutes or until topping is bubbling and lightly browned.
  4. Note: Alternatively, you could microwave the cauliflower and 2 T water in 12 cup casserole. Cover and microwave on high for 8 min or until almost tender crisp, rotating twice. Let stand covered for 5 minutes. Drain and bake as above.

I usually make it in the microwave but we don't eat mayo so I use ranch dressing...It's yummy that way too.
