CHINESE SLAW FOR DIABETICS

- Ingredients: shopping list
- 1 ( 16-oz ) package of coleslaw mix ( about 9 cups) shopping list
- 1/3 cup sliced almonds, toasted shopping list
- 1/3 cup unsalted sunflower kernels shopping list
- 1 cup chopped green onions shopping list
- 1 ( 3-oz ) package beef-flavored Ramen noodles, uncooked shopping list
- 1/3 cup vegetable oil shopping list
- 1/3 cup red wine vinegar shopping list
- 10 packets sugar substitute ( such as Equal or equivalent ) shopping list
How to make it
- 1)Combine the first 4 ingredients in a medium bowl. Crumble noodles in slaw mixture, reserving beef seasoning packet.
- 2)Combine oil, vinegar, and sugar substitute, stirring well with a wire whisk. Pour over slaw seasoning from packet; toss well.
- Serving size: ½ – cup
- Calories per serving: 87, Fat: 7mg, Carbohydrate: 5.6g, Cholesterol: 0, Sodium: 70mg
- Diabetic Exchange: 1 Vegetable, 1 Fat
