This Chinese slaw is easy to make and ready in minutes. Adapted from Monique Armstrong's recipe posted in the Successful Living with Diabetes Magazine 2000.

  • Ingredients:
  • 1 ( 16-oz ) package of coleslaw mix ( about 9 cups)
  • 1/3 cup sliced almonds, toasted
  • 1/3 cup unsalted sunflower kernels
  • 1 cup chopped green onions
  • 1 ( 3-oz ) package beef-flavored Ramen noodles, uncooked
  • 1/3 cup vegetable oil
  • 1/3 cup red wine vinegar
  • 10 packets sugar substitute ( such as Equal or equivalent )

Directions
  1. 1)Combine the first 4 ingredients in a medium bowl. Crumble noodles in slaw mixture, reserving beef seasoning packet.
  2. 2)Combine oil, vinegar, and sugar substitute, stirring well with a wire whisk. Pour over slaw seasoning from packet; toss well.
  3. Serving size: ½ – cup
  4. Calories per serving: 87, Fat: 7mg, Carbohydrate: 5.6g, Cholesterol: 0, Sodium: 70mg
  5. Diabetic Exchange: 1 Vegetable, 1 Fat
