Madhur Jaffrey, the brilliant Indian chef, presented this recipe in the series In Julia's Kitchen with Master Chefs. I was immediately intrigued and having tried it, it is now a staple in my repertoire.

Ingredients
  • 1 1/2 cups Basmati rice - washed in a bowl of cold water for 30 seconds, then drained
  • 2 Tbsp ghee (clarified butter) or Canola oil
  • 1 stick of cinnamon
  • 3 cloves
  • 1 green cardamom pod - pressed open but not crushed
  • 2 cups water
  • 1 bunch of dill - washed, pat dry and finely chopped (stems and sprigs but not root ends)
  • 1/2 lemon - juice only
  • 1 tsp coarse salt
  • white pepper to taste

Directions
  1. Heat the oil in a heavy bottomed sauce pan.
  2. On medium-high heat, fry the cinnamon stick, cardamom pod and cloves until very fragrant - about 1 1/2 minutes. Do not burn the spices.
  3. Add the rice and coat with the oil. Stir for another minute or so until rice becomes slightly toasted and smells nutty.
  4. Add the water, salt and pepper. Cover and lower to the absolute lowest flame possible and let sit for 10-15 minutes. Check for doneness by using a fork to check for water content. If the rice is too chewy for your taste, add another 1/4 cup water and let sit a while longer until absorbed.
  5. Remove the spices, add the dill, lemon juice and pepper and gently fluff together with 2 forks until well combined.
  6. Serve immediately.
