How to make it

  • In a medium bowl, combine grated carrots and brown sugar. Set aside for 60 minutes, then stir in raisins.
  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch cake pans.
  • In a large bowl, beat eggs until light. Gradually beat in the white sugar, applesauce, oil and vanilla. Stir in the pineapple.
  • Combine the flour, baking soda, salt and cinnamon, stir into the wet mixture until absorbed. Finally stir in the carrot mixture and the walnuts. Pour evenly into the prepared pans.
  • Bake for 45 to 50 minutes in the preheated oven, until cake tests done with a toothpick. Cool for 10 minutes before removing from pan. When completely cooled, half each layer, frost with your favorite cream cheese frosting. (Perfect Cream Cheese Frosting)

    This is a fantastic recipe! I soaked my raisins in rum and used fresh pineapple. If like me, you use a bunt pan, grease it up really well because mine stuck a bit. I also tried a mini-loaf version and they came out really well.

    Laynie, It is definately a finger licker. It's one of my favorites too. Dors, if you dont have applesauce you can use all oil. Same amount as applesauce. I just substituted to save on the fat.

    This recipe looks delicious although I am not a fan of whole raisins. What can I substitute without sacrificing the flavor? I was thinking of putting the raisins in a food processor so I wouldn't have the texture of the raisins. I know that sometimes when you alter a food the results aren't always the same. This is the first carrot cake recipe that I have seen that actually seems irresistable!
