Chipotle Shredded Beef Recipe
Turn an eye round roast,into savory,zesty meat for a pita or sandwich on a roll.

Ingredients
  • 2lb. boneless eye round,trimmed,cut into small chunks
  • 1 small onion,thinly sliced.
  • 5 cloves garlic,crushed
  • 1 tsp. salt
  • 1/2 cup crumbled chorizo
  • 1 small onion,chopped
  • 1 clove garlic,minced
  • 1 14.5 oz. can diced tomatoes
  • 1 tsp'dried oregano
  • 1 tsp. dried thyme
  • 1 bay leaf
  • 1/4 cup bottled chipotle sauce.
  • 2 medium avocados,sliced
  • Additional onion slices

Directions
  1. Combine the beef,sliced onion,crushed garlic,and salt in a large saucepan.
  2. Add water to cover.
  3. Bring to boiling;skim off any foam.
  4. SIMMER,uncovered,over medium-low heat,1 hour or until tender.
  5. Use a slootted spoon,transfer beef to a bowl.
  6. SHRED meat with 2 forks,set aside.
  7. Reserve the broth.
  8. Heat medium skillet over medum heat.
  9. Add chorizo.
  10. Cook ans stir 5 minutes or until just cooked through.
  11. DRAIN.
  12. Add chopped onion and other minced garlic,cook 5 minutes.,or until tender.
  13. Add beef,tomatoes,oregano,thyme,bay leaf,and chipotle sauce.
  14. Cook 15 minutes,stiring occasionally .
  15. If needed,add up tp 1 cup of reserved broth to keep mixture moist.
  16. Serve with avocado and the extra onion slices,on a pita,fresh roll,or just plain.
