Spinach Turnovers

- Crust shopping list
- 2-8 oz. pkgs. cream cheese, softened shopping list
- 1 1/2 cups butter, softened shopping list
- 2 1/2 cups flour shopping list
- 1/2 tsp. salt shopping list
- Filling shopping list
- 5 strips bacon, cooked and crumbled, reserving 1 tbls. bacon grease shopping list
- 1/4 cup onion, finely chopped shopping list
- 2 garlic cloves, minced shopping list
- 1 10 oz. pkg. frozen chopped spinach, thawed and well drained shopping list
- 1 cup ricotta or cottage cheese shopping list
- 1/8 tsp. ground nutmeg shopping list
- salt and pepper, to taste shopping list
- 1 egg, beaten shopping list
- salsa, optional shopping list
How to make it
- Preheat oven to 400
- In mixing bowl, beat cream cheese and butter with hand mixer until creamy
- In another mixing bowl, combine flour and salt
- Slowly add flour to creamed mixture(dough will be stiff)
- Turn onto floured surface and gently knead 10 times
- Cover and refrigerate 2 hours
- Saute onion and garlic in bacon grease until tender
- Remove from heat, stir in bacon, spinach, cottage cheese, nutmeg, salt and pepper
- Cool to room temp.
- On lightly floured surface, roll dough to 1/8 inch thick
- Cut into 3inch circles
- Brush edges with egg
- Put 1 heaping tsp. filling on each circle
- Fold over and seal edges
- Prick tops with fork
- Brush with egg
- Bake 10-12 minutes or until golden brown
- Serve with salsa
