Chile Poblano Cream Soup Recipe
Sent to me by my uncle. He says that it is authentic Mexican . We made it and was very impressive.

Ingredients
  • 3 oz butter
  • 1 onion, sliced
  • 1 can Poblano peppers
  • 2 cups chicken stock
  • 1 tbsp cilantro
  • 1 cup cream
  • 8 oz jack cheese in cubes
  • 3 corn tortillas, cut in squares and fried

Directions
  1. Melt the butter and sauté the onion; add the poblano chili and sauté
  2. Leave it to cool and add the chicken stock and cilantro.
  3. Heat it and season with garlic salt and flavoring
  4. Add the cream and serve very hot.
  5. Serve with cheese and small topotos

Oh this is wonderful!


I am a big fan of Poblano peppers too. I didn't know they came in a can. Not in our Gringo market anyway. Obviously I'm going to have to check out the local supermercado.
