How to make it

  • Preheat oven to 350°. Coat loaf pan with no-stick spray. Whisk flour, cornmeal, baking powder, salt, and baking soda together in a small bowl. In another small bowl, whisk together yogurt, lemon juice, and vanilla. In a medium bowl, add sugar, oil, and grated lemon rind and stir; beat in eggs.
  • Blend flour and yogurt mixtures into sugar mixture, alternating. Begin and end with flour mixture. Once completely blended, stir in blueberries. Pour batter into loaf pan and bake at 350° for 45 to 55 minutes. Remove from pan and cool.
