  • Oriental Asparagus Salad
  • 1 pound asparagus,cut into 2-inch pieces
  • 2 Tablespoons soy sauce
  • 1 Tablespoon Vegetable oil
  • 1 Tablespoon vinegar
  • 1 1/2 Tsp. sugar
  • 1 Tsp. sesame seeds,toasted
  • 1/4 to 1/2 tsp. ground ginger
  • 1/4 Tsp. ground cumin
  • In a saucepan,cook the asparagus in a small amount of water until crisp-tender,about 3-4 minutes. Drain well and place in a large bowl. Combine soy sauce,oil, vinegar,sugar,sesame seeds,ginger and cumin: pour over asparagus and toss to coat. Cover and chill for 1 hour. Drain before serving. Yield: 4 servings.
  • Strawberry Tossed Salad
  • This is a AWESOME recipe: You can serve this with Poultry,ham,and pork all throughout the year. A MUST TO TRY.
  • 1/2 cup vegetable oil
  • 1/3 cup sugar
  • 1/4 cup cider or red wine vinegar
  • 1 garlic clove,minced
  • 1/4 Tsp. salt
  • 1/4 tsp. paprika
  • Pinch white pepper
  • 8 cups torn romaine
  • 4 cups torn Bibb or Boston lettuce
  • 2 1/2 cups sliced fresh strawberries
  • 1 cup (4 ounces) shredded,
  • Monterrey Jack cheese
  • 1/2 cup chopped walnuts, toasted
  • Combine the first seven ingredients in a jar with tight-fitting lid: Shake well. Just before serving,toss salad greens,strawberries,
  • cheese and walnuts in a large salad bowl. Drizzle with dressing and toss. Yield; 6-8 servings.
  • Summer Salad with Citrus Vinaigrette
  • Vinaigrette:
  • 3 tablespoons orange juice
  • 3 tablespoons cider or red wine vinegar
  • 2 Tsp. honey
  • 1 1/2 tsp. Dijon mustard
  • 1 tsp. olive or vegetable oil
  • SALAD:
  • 1 pound boneless sirloin steak,
  • cut into thin strips
  • 1 tablespoon vegetable oil
  • 1/2 tsp,salt, optional
  • 4 cups torn romaine
  • 2 large oranges,peeled and sectioned
  • 1/2 cup sliced fresh strawberries
  • 1/4 cup chopped walnuts,toasted,optional
  • In a small bowl, whisk the vinaigrette ingredients; set aside. In a large skillet,stir-fry steak in oil for 1-2 minutes. Sprinkle with salt if desired. In a large bowl,toss romaine,oranges,
  • strawberries and steak. Top with walnuts if desired. Yield: 4 servings.

Directions
  1. Sweet Potato Salad
  2. 2 pounds sweet potatoes
  3. 1 1/2 cups mayonnaise
  4. 2 tsp. Dijon mustard
  5. 1/4 tsp. salt
  6. 4 hard cooked eggs,chopped
  7. 1 1/2 cups finely chopped celery
  8. 8 green onions,sliced
  9. Place sweet potatoes in a large saucepan and cover with water. Cover and boil gently until the potatoes can easily be pierced with the tip of a sharp knife, about 30-45 minutes. Drain. When potatoes are cool, peel and dice. In a large bowl,combine mayonnaise,mustard and salt. Stir in eggs,celery and onions. Add potatoes; stir gently to mix. Cover and refrigerate for 2-4 hours. Yield; 8-10 servings.
  10. BROCCOLI SALAD
  11. DRESSING:
  12. 3/4 to 1 cup Mayonnaise
  13. 1/4 to 1/2 cup sugar
  14. 3 TBSP. Wine Vinegar
  15. SALAD MIX
  16. 1 or more broccoli heads, cut into tiny florets
  17. 1/2 to 1 cup raisins
  18. 3 to 10 Slices of bacon, cut into one-inch pieces and fried crisp
  19. 1/3 to 1/2 cup finely chopped purple onion
  20. 1/2 cup celery diced (optional)
  21. 1/2 to 1 cup unsalted sunflower seeds
  22. In a large bowl, combine broccoli, raisins, onions, sunflower seeds, and celery (if using)
  23. In a small bowl, combine mayonnaise , sugar and vinegar. Pour over broccoli mixture; toss to coat. Refrigerate at least 2 hours. Just before serving,
  24. sprinkle on bacon and toss. If bacon is cooked ahead of time, warm it in the microwave. NOTE: We like more than !/2 cup of celery in it.
  25. often serve it with out bacon. We like it both ways.
  26. I plump the raisins in hot water, then drain them before adding them.
  27. Sugar can be adjusted to taste. I add less.
  28. Pasta Salad Supreme
  29. 16 ounces rotini, fusilli, or shell pasta
  30. 1 (8 ounce) bottle Italian or ranch-style salad
  31. dressing
  32. 4 tablespoons McCormick Salad Supreme Seasoning
  33. 5 cups assorted raw vegetables: tomatoes, carrots, broccoli, or red onions.
  34. Cook pasta according to package directions. Rinse under cold water to stop cooking and drain well.
  35. Place pasta in large salad bowl, add dressing and seasoning, and toss gently to coat.
  36. Cut vegetables into bite-sized pieces. Add vegetables to pasta and mix gently.

Wow, 5 salads in one recipe! Great, great post my friend and all of them sound wonderful. Can't wait to try them out - just in the order you gave them as I already have the asparagus in the fridge!
