Ingredients
  • 1 tsp oil
  • 4 to 6 carrots, sliced
  • 1 large sweet potato, cubed
  • 2 to 3 tsp honey or 4 Tbsp sugar
  • 1/4 cup orange juice
  • Dash of salt
  • 2 slices pineapple, cut into pieces
  • 1/2 tsp nutmeg

Directions
  1. Coat bottom of 2-quart saucepan with oil and heat
  2. Add carrots and cook on low heat for about 10 to 15 minutes.
  3. Add sweet potato, honey, orange juice, and dash of salt.
  4. Cook over low flame for 30 minutes.
  5. Add pineapple and nutmeg, if desired.
  6. After 5 minutes, remove from heat.
  7. Serve warm.

Alterations


I miss my bubby's tsimmis so much. She used to add 3-4 fresh slices of ginger and about 20 prunes to hers, not to mention the fact that she used schmaltz (chicken fat) in lieu of oil which gives it an authentically Jewish flavour. Thanks for the jaunt down memory lane. :)
