How to make it

  • Peel off some strips of the green skin from the cucumber
  • Use a fork and score the cucmber with the tingues
  • Using a mandolin or by hand, cut cukes into almost paper thin or very thin slices
  • Place cucmber in a bowl along with minced garlic, minced fresh mint
  • Add about 1 cup of yoghurt and mix well.
  • Add salt and pepper and a dash of sugar to taste
  • Chill.
  • Just before serving adjust seasoning if desired
  • The yoghurt will become liquidy along with the cuckes and this is perfect!
  • Serve salad by removing with a slotted spoon
