Ingredients
  • 4 Cups Broccoli Florets
  • 5 Medium Chicken Breast, No Skin, No Bone, R-t-c, defrost if frozen
  • 1/4 Pound Light Butter
  • 10 1/2 Ounces Cream of Chicken Soup, 1 can
  • 10 1/2 Ounces Mayonnaise
  • 2 Cups Shredded Cheddar Cheese

Directions
  1. Boil chicken breasts and broccoli in separate saucepans until each is fork tender.
  2. Cut chicken breasts into 1-1/2 inch pieces.
  3. Put broccoli into a bowl with the butter cut into pats. Mix together until butter is melted.
  4. Place broccoli in the bottom of a glass baking dish, layer chicken pieces onto the broccoli.
  5. Empty chicken soup into a medium bowl, refill can with mayonnaise and put it into the bowl. Mix together and spread over the chicken layer.
  6. Preheat oven to 350 degrees.
  7. Sprinkle shredded cheddar cheese over the top layer of the baking dish.
  8. Bake until cheese begins to brown (about 25 minutes). Serve when ready.

I am making this for the whole family
I think it will definately be a hit. I dont keep canned soups since I make my own all the time but I will give it a try and add them to my grocery list.

It's like waiting for the jury to come back. And you are exactly right, the choice of cheese makes it a personal recipe. I love this recipe! I make this often cuz the kids love it so much. One thing I do different is put Uncle Ben's broccoli cheddar rice on the bottom layer.

Hey, recipes are signposts. They just mark out the territory. Please by all means try the Dijon. If you love it I'll try it. (Nothing better than the royal taster to check things out before I do) :) Actually it sounds delicious. I'm partial to Honey Mustard on chicken myself. Hmm.. maybe I should try that?


Ok I'm back.. Tomorrow I will be making this- Will come back to let you know how it went. Sounds like everyone likes it, and why not? chicken and cheese paleeeze what could be better. I'm just going to have to work out extra hard the next day. :)

Made this Dugger and it was a hit, instead of using mayo I used sour cream and did add the dijon which was great also used a brand of cream of chicken soup without MSG called Imagine then just served with some Jasmine Brown Rice.


Ahh.. yes. Jasmine Rice. Another of those little hidden elements that you find now and then. Will have to try that next time we fix it.


Nice one, I wonder would it be as nice if I`ll substitute brocolli with eggpalnts?


Kamushek, that sounds interesting. I have an Eggplant Parmesan recipe but this would be a twitch different. Will give it a go.


Mmmm, sounds good. I've got a substitute for the can of soup, only the cheddar cheese will be impossible to find! I'll have to be creative... :) They have a billion types of cheese here, just not cheddar.


Ok,you are right about the cheese. Cheddar is so available here I forget it is not universal. Any cheese that will melt well and not be stringy will work. It will change the taste but what the hell. That is not a bad thing, just a different thing.


This is just the thing I've been looking for. I volunter to teach ELL (English Language Learners) at a local Settlement agency that provides services to refugees and immigrants. I've gotten to know some of the students very well and want to invite them to my house for lunch during our holiday season. It will be a sharing of cultures, two of my student are from Somalia and are Muslim so I need to make sure the lunch menu will meet their religious dietary restriction. I think I'm OK if we don't have any pork or pork products. I'm also inviting some of my American friends. BTW I'm new to the membership

They are similar. I would definitly recommend trying the lemon juice and curry in it. It will give it a whole new flavor.

Do you think it would be weird to add Dijon mustard to it? I love Dijon with chicken.


Nothing is wierd. And I also love Dijon or Honey Mustard with chicken. Recipes are written in chalk so you can change them easily. LOL


Yummy! I love dishes like this. I would make this a one dish meal and add a layer of rice or egg noodles or parboiled potatoes (just mix it with some of the soup first). Thanks for the great recipe Dugger
