A cold wilted lettuce (spinach). Tastes like Wilted Spinach without the bacon grease. You can use Bibb Lettuce or Mixed Spring Salad in place of Spinach. Any soft leafy lettuce will work nicely if you prefer it.

Ingredients
  • SALAD
  • 1 Package fresh spinach, cleaned
  • 4 each egg, boiled and cooled
  • 1/2 pound bacon, crumbled
  • 1 can waterchestnut, canned, sliced
  • DRESSING
  • 1 Cup olive oil
  • 2 Tbsp sugar
  • 1/2 cup red wine vinegar
  • 1/3 cup ketchup, 1/3
  • 1/3 cup Sweet Onion, chopped

Directions
  1. Combine dressing ingredients in a salad shaker or jar. Shake well and refrigerate for an hour before serving.
  2. Cook bacon until crisp. Place on paper towel to drain. Set aside.
  3. Shell the boiled eggs and slice. Set aside. Drain water chestnuts, set aside.
  4. Clean spinach greens and remove stems.
  5. Toss salad and dressing together just before serving. Top with sliceed egg, water chestnuts and crumbled bacon.
