Stuffed Southwest Chicken

- 4 chicken breasts shopping list
- 2 TBS floridian gourmet southwest seasoning shopping list
- 3/4 cup of olive oil shopping list
- 1/2 lb of frozen corn shopping list
- 3 jalapenos seeded cut into 1 in pieces shopping list
- 1/2 onion diced shopping list
- 1/2 red bell pepper 1 in pieces shopping list
- 4 whole garlic cloves shopping list
- 1/2 block of cream cheese shopping list
- 1 tsp floridian gourmet southwest seasoning shopping list
How to make it
- Mix 2 TBS Southwest seasoning and 1/4 cup of olive oil and pour over chicken and marinate at least 4 hrs to overnight.
- In a skillet add 1/4 cup of olive oil and on a medium heat saute garlic for 5 minutes. Add the onion, jalapeno, bell pepper and saute for another 10 minutes. Remove from pan and reserve. Add some more olive oil to the pan and add the corn. Saute until the corn starts to turn color but do not burn( about 5 minutes). Add the reserved vegetables and stir frequently for 1 minute. Add the cream cheese and stir until incorporated and melted ( about 2 minutes) Take pan from heat. Meanwhile slit the chicken breasts by inserting a knife 1 in from the end in the middle of the breast and running along side of breast stopping 1 in short to make a pocket.Meanwhile preheat oven to 350. Stuff each chicken breast with as much filling as possible. In an oven proof skillet add 3 TBS olive oil and on a med-high heat on the stovetop saute chicken breasts for 3 minutes then flip and repeat. Stick skillet directly in the oven and bake for 15 minutes. ( allow to rest 5 minutes prior to serving)
