Calabrese Pasta Recipe
This is a beautiful looking pasta filled with flavour. The two cheeses are a nice blend and the olives and pine nuts add an interesting flavour.t

Ingredients
  • 3 red onions, finely sliced
  • 2 garlic cloves, minced
  • 1 bunch of spinach (can add frozen just to heat if out of season)
  • 1/2 tsp salt
  • 3 cups of uncooked fuselli
  • 1 1/2 c crumbled feta
  • Olive Oil for frying
  • 1/4 c of toasted pine nuts
  • 1/4 c of kalamata olives
  • Parmesan cheese and pepper to taste

Directions
  1. Cook and drain the pasta.
  2. Saute the onions and garlic in olive oil.
  3. Add the salt, spinach, pasta and feta cheese and wilt the spinach.
  4. Toss with the toasted pine nuts
  5. Serve and top with parmesan cheese, pepper and Kalamata olives.
