How to make it

  • Cook and drain the pasta.
  • Saute the onions and garlic in olive oil.
  • Add the salt, spinach, pasta and feta cheese and wilt the spinach.
  • Toss with the toasted pine nuts
  • Serve and top with parmesan cheese, pepper and Kalamata olives.

    I am Clabrese and there is nothing Calabrese about the definging ingredients of this recipe. In Calabria we don't eat feta and there are olives called calabrese olives because they grow all over the region. These olives are tiny and green. From my home town of Locri, Calabria I have never seen Feta ever served. Also ever family in the Region of Calabria know a recipe called Pasta Calabrese made with oil and garlic, breadcrumbs, hot red pepper and anchovie. I have also seen Sardines used in place of anchovie. Ask any Italian born and raise in Calabria what Pasta Calabrese is. Calabria is the southern most region in Italy. Pine nut only grown in the very north. You rarely find them in much southern Italian cooking. This recipe should be called Pasta Greco (Greek pasta)!
