How to make it

  • Squeeze lime juice over shrimp and marinate while preparing other ingredients. Heat oil in a saute pan. Add shrimp and rapidly cook. Remove and reserve. Add onion and cook over medium heat until translucent. Add cream and bring to a boil. Reduce by about one-quarter to thicken slightly. Add ketchup and cognac. Return shrimp to the pan. Add hearts of palm and bring to serving temperature. Adjust seasoning with salt and white pepper.

    Ummm.. Love hearts of palm. They are cool like a cucumber, very slightly vinegary, white, firm yumminess. Not as crunchy as a waterchestnut but yeah.

    I would love this.

    This is a beautiful dish. Have just made it for the wife and I. Substituted Fresh Asparagus for the Hearts of Palm and Soy Sauce for the Cognac to bring costs down. Wonderful.

    Sounds really good ! I've never had hearts of palm. do they taste similar to anything else ?
