Creamy Lima Bean Dip

- 3 cups cooked tender baby lima beans shopping list
- 2 - 3 cloves of garlic shopping list
- 1/4 cup olive oil shopping list
- juice from a small fresh lemon or lime shopping list
- 2 to 3 Tbs of Greek Yoghurt- or plain thick yoghurt shopping list
- salt and pepper to taste shopping list
How to make it
- In a food processor puree the cooked beans and garlic together.
- process in the yohgurt, and lime or lemon juice
- While machine is running, drizzle thru feed tube the olive oil and process smooth and creamy
- Salt and fresh black pepper to taste
- Serve with crackers, baguette etc
- Correct seasoning if desired or if you want hinner, add in a bit more yoghurt
- Note: add a Tbs of fresh chopped mint which is also nice in this recipe
