Ingredients
  • 1 pound lean ground beef, cooked and drained
  • 1 package taco seasoning mix
  • 1 1/2 cups cheddar cheese, shredded
  • 2 tablespoons water
  • 2 cans refrigerated crescent rolls
  • 1 medium green bell pepper
  • 1/2 head lettuce, chopped or shredded
  • 1 large ripe tomato, seeded and diced
  • 1 small sweet onion, diced
  • 1/2 cup black olives, sliced
  • 1 cup salsa
  • 1/2 cup sour cream

Directions
  1. Preheat oven to 375 degrees.
  2. In bowl, combine cooked beef, taco seasoning (I use less than the entire package), cheese and water.
  3. Taste and adjust seasonings if desired.
  4. On pizza pan, arrange individual crescent rolls with bases overlapping and points facing outward.
  5. It should look like a "sun" with a 5 inch diameter circle in center.
  6. Spoon meat evenly over rolls, mounding it about 2 inches high and 2 inches wide around entire circle.
  7. Use hands to mound into a ring shape if needed.
  8. Fold roll "points" loosely over filling to center. Filling will not be completely covered.
  9. Bake 20 to 25 minutes.
  10. Cut top off green bell pepper. Remove membranes and seeds. Fill pepper with salsa.
  11. Arrange taco ring on serving plate.
  12. Place filled pepper in center of ring.
  13. Mound lettuce, onion, tomato and olive around pepper.
  14. Serve sour cream on the side.
