Bacon String Beans Almond Ding Ding Recipe
I created this recipe at the request of my husband... Excellent choice for someone who really enjoys the flavor of bacon in their dishes. OH, and he named it too.. Don't ask...lol :) It's a total knock out of a side!

Ingredients
  • 1 lb Bag of Frozen Fancy Cut String Beans (fresh may be used if desired)
  • 2-3 Shallots
  • 1 Stick Butter
  • 1 cup Slivered or sliced almonds (slivered give more of a crunch)
  • 1/2 lb bacon
  • 1/2 cup plain or flavored bread crumbs
  • 1/4 cup white cooking wine
  • 2 Tbsp Extra Virgin Olive Oil
  • 2 tbsp Fresh Lemon Juice

Directions
  1. Cook your bacon until crisp (to liking) set aside
  2. Leave 2-3 Tbsp bacon oil in pan
  3. Put your string beans in a large microwaveable/oven safe Bowel with a little bit of water to cover the bottom
  4. Cover the bowel with a very damp papertowel & Heat on High for 7-8 minutes
  5. Peel & Dice your shallots - set a side for a moment
  6. Melt your butter in a large pan until very slightly brown, then add your shallots, reduce heat , cook until they are clear.
  7. Crumble the bacon in the pan along with olive oil, & bread crumbs, stir around for 1-2 minutes.
  8. Last add your Wine & Lemon Juice stir around a bit more, cover and simmer on low for about 3-5 minute.
  9. Let stand about 5 minutes & Serve

I love the name. I'm going to try it the next time I have fresh green beans on the menu.


Oh, yeah! My husband's nephew is the only person I'd ever heard of to saute green beans in bacon grease, but you beat it. Great recipe!


Recipe is a winner, and full of flavor. The bacon , wine, and lemon juice sets this one to the next notch.I used cream sherry for the wine it off set the lemon juice.


Good sounding recipe...at this moment i am preparing it...but you do not indicate when to mix in the almonds or when to combine with the beans nor what it is you to do with the saved
bacon fat...but 2/3 of a recipe is better than none..i will proceed blindly but hopefully
