How to make it

  • Preheat oven to 350F.
  • Use electric beater to cream butter.
  • Add the cornstarch and icing sugar, a little at a time.
  • Add the vanilla and almond extract.
  • Add the flour and continue beating until the dough resembles whipped cream.
  • Drop by spoonfuls on an ungreased cookie sheet.
  • Bake for between 10 and 15 minutes, until golden, but not brown.
  • You must watch these delicate cookies closely, as they will overcook very quickly.
  • This recipe creates about 8 dozen cookies, and the first batch will last a very short time, so be prepared to make more very soon.

    Perfect, awesome, excellent, delicious and where was this recipe when I needed it. I have a couple of dependable stand by shortbread recipes but I was looking for this exact one. My mother made her shortbread cookies with these ingredients and I lost her recipe several years ago. Thanks for submitting it to the group JJ.

    Yes. Icing sugar is a form of powdered sugar that is used most often to produce cake frostings and the like.

    Pardon my naivete showing: I assume you mean powdered sugar when you say "icing sugar" - these sound very easy to make, and tasty as well ! One of my favorite things to do at Christmas is to see how long a tin of shortbread cookies lasts. Anybody need a couple dozen tins ??? '-)
